The principal ingredient in the legendary liqueur Absinthe, wormwood use dates back to before 1600 BC. This makes a very interesting replacement for bittering hops.

Okay, we used this as a bittering hop in a Pale Ale. WOW, bitter. Found out it was a 3 stage taste, first drink tip of tongue, bitter, second taste middle of tongue, still very bitter. Third taste you are drinking beer!  For sure fun to play with.
