Hop Varieties

These are the hop varieties we normally carry, but stock is constantly changing so check here  availability. Most all are available in both whole and pellet forms. The hops you receive will be marked on the package for the actual alpha acid and oil percentages. Unless otherwise noted, all hops are grown in the US Northwest.  All hops are now 2004 crop year.

Hops are now available in either 4 or 8 oz bags. 

Bittering Hops

Perle: Perle is a newer variety, originally from Germany but now grown quite successfully in the US. Perle is a medium alpha hop with a very clean, almost minty bitterness and pleasant aroma. Rapidly becoming one of our favorite hops, we have used it with success in heavy and light styles.

Chinook: Chinook is a high-alpha bittering hop with a characteristic heavy, spicy aroma.

Centennial: A relatively new hop on the market, Centennial is one of our favorites. This hop used to be called CFJ90. Described by some as a "Super Cascade" and we tend to agree, but it's not nearly as "citrusy". Some even use it for aroma as well as bittering. Bitterness is quite clean and can have floral notes depending on the boil time.

Columbus: Columbus is a new high alpha variety, similar in some respects to Centennial (but is less like Cascade and more herbal in character) and is being used by many breweries as a replacement for it. Like Centennial it can be used as an aroma hop as well.

Galena: Galena is the most "mellow" hop of the high-alpha varieties, and has replaced Cluster as the most widely grown US hop. The bitterness is clean and well balanced. Great general purpose bittering hop.

Horizon: Goes well in all ales & lagers. It is a dual-purpose hop with a high alpha and good aroma. Has a low co-humulone level, which results in a cleaner tasting beer. (Great for a summer brew.) Pellets only.  Pellets:  HRZPE 4.50/4ozs     $7.50/8 ozs.  

Nugget: Nugget is a great bittering hop with a heavy herbal aroma. We carried this hop our first year, but dropped it due to lackluster sales. Now we're stocking it again, but in pellets only.

Northern Brewer: See Hallertau Northern Brewer below.

Hallertau Northern Brewer:  Hallertau Northern Brewer (the Northern Brewer variety grown in the Hallertau). When we can get it, we prefer these to the domestic.

Aroma Hops

Cascade: Cascade is probably the most popular aroma hop with a "US" character. It is the backbone of Anchor Liberty and many other domestic Pale Ales. It is our favorite aroma hop, especially for dry-hopping. It has a pleasant, spicy and floral aroma profile with strong citrus notes.

East Kent Goldings: Imported from the U.K. East Kent Goldings has long been considered the premier English aroma hop. Perfect for finish or dry-hopping British-style ales. Real East Kent Goldings of high quality is rarely available to the homebrewer.

Pellets: EKGPE $7.00/4 ozs.   $10.75/8 ozs.     

English Fuggle:  Imported from the UK.  Fuggle is a classic English Ale hop.  Also known as Styrian Goldings when grown in Yugoslavia.
Whole: FUGWH $7.00/4 ozs.   $10.75/8 ozs. 
Pellets: FUGPE

Willamette: Willamette is a seedless version of Fuggle and has very similar characteristics. The aroma is mild and pleasant, but has a slight spicy note missing in Fuggle.

Tettnanger: Tettnanger is one of the original "noble" hops, grown originally in the Tettnang region of Germany. Very fine, spicy aroma profile.

Pellets: TETPE $4.50/4 ozs.   $7.50/8 ozs. 

Mt. Hood, and Liberty are "sister hops" and were  bred to be US grown substitutes for Hallertauer Mittelfrüh, the true German noble hop. In fact, we don't carry any domestic "Hallertauer" because these hops are so much better. .  All are great for German-style lagers and recipes calling for Hallertauer, but also consider Hallertau Tradition.

Mt. Hood: Mt. Hood was the first to be released and has a strong following. Aroma is mild and clean.

Liberty: Liberty was released in 1991 and has gained immediate acceptance. Aroma is very fine, mild and pleasant, slightly spicier than Mt. Hood or Hallertau Tradition.  We are now stocking Liberty in whole form again.

Pellets: LIBPE $4.50/4 ozs.   $7.50/8 ozs. 

Ultra:  This hop was not grown in sufficient quantities this year to be offered for sale.  It will probably vanish from the brewing scene altogether.   Consider Hallertau Tradition, Mt. Hood, Liberty or Sterling as substitutes.

Sterling:   The newest aroma hop to be released, Sterling is a cross between Saaz and Hallertauer and has the properties of both.  Sterling is gaining fast acceptance by small and large breweries.  Alphas are running a little over 6% and oils about 1%.  Aroma is very fine, storagability is reported to be excellent.

Hallertau Mittelfrüh:  Finally available again after a few years of being unobtainable.   Get it while you can!  This is the classic German "noble" aroma hop.
Whole: HMFWH $7.00/4 ozs.    $10.75/8 ozs.
Pellets:  HMFPE  $7.00/4 ozs.   $10.75/8 ozs.

Hallertau Tradition: Grown and bred in Germany as a replacement for Hallertauer Mittelfrüh and is truly noble in aroma and character. This is the closest hop you can buy to Hallertauer Mittelfrüh. Highly recommended.

Czech Saaz:   Imported Czech Saaz, the original Pilsner hop, is a true noble hop and the backbone of Pilsner Urquell. If you want to make an authentic Pilsner, Czech Saaz is the only choice. There is no acceptable domestic substitute. Very mild with pleasant hoppy notes. Real Czech Saaz is rarely available to the homebrewer.
